Il Prof. Filippo Giarratana è nato a Ciriè (TO) il 26 Ottobre 1978 e si è laureato presso la Facoltà di Medicina Veterinaria dell’Università di Messina il 04/11/2004 discutendo la tesi dal titolo “Valutazione strumentale del colore della muscolatura di Tonni destinati alla trasformazione”.
Nel 2007 ha conseguito il titolo di Dottore di Ricerca in “Salubrità dell’ambiente marino, ittiopatologia e qualità igienico sanitaria del pescato” (XX Ciclo presso presso la Facoltà di Medicina Veterinaria dell’Università degli Studi di Messina) discutendo una tesi dottorale dal titolo: “Interferenza di “Specific Spoilage Organism” (SSO) sulla dinamica di crescita in vitro di Aeromonas hydrophila”.
Dal 2008 al 2011 ha frequentato la Scuola di Specializzazione in Ispezione degli Alimenti di Origine Animale, presso la Facoltà di Medicina Veterinaria di Torino, con sede a Moretta (CN), conseguendo il titolo di “Specialista in Ispezione degli alimenti di origine animale”.
Dal 2009 al 2013 ha avuto un “Assegno per la collaborazione alla Ricerca” dal titolo: “Caratterizzazione dei pericoli nei prodotti d’acquacoltura off-shore nell’ottica degli adempimenti previsti dal Regolamento 852/2004 per la produzione primaria”.
Dal 2014 al 2018 è stato Ricercatore “junior” a Tempo Determinato per il Settore Scientifico Disciplinare VET/04- Ispezione degli Alimenti di Origine. A luglio del 2017 ha conseguito l’Abilitazione Scientifica Nazionale alle funzioni di Professore di II fascia (Associato) Bando D.D. 1532/2016 per il SC 07/H2 dal 20/07/2017 al 20/07/2023.
Dal 11 Dicembre 2018 al 11 dicembre 2021 è stato Ricercatore “senior” a Tempo Determinato per il Settore Scientifico Disciplinare VET/04- Ispezione degli Alimenti di Origine Animale presso il Dipartimento di Scienze Veterinarie, Università di Messina. A novembre del 2020 ha conseguito l’Abilitazione Scientifica Nazionale alle funzioni di Professore di I fascia (Ordinario) Bando D.D. 2175/2018 per il SC 07/H2 - SSD VET/04 dal 19/11/2020 al 19/11/2029.
Dal 11 Dicembre 2021 è Professore Associato per il Settore Scientifico Disciplinare VET/04- Ispezione degli Alimenti di Origine Animale presso il Dipartimento di Scienze Veterinarie, Università di Messina.
Attività didattica nazionale:
Nel corso di Laurea in Medicina Veterinaria (LM42) dal 2014 è stato ed è docente delle seguenti discipline, “Tirocinio VET/04 – Audit ufficiale”, “Tirocinio VET/04 – Controllo ufficiale industria alimentare 1” e “Tirocinio VET/04 – Controllo ufficiale industria alimentare 2”.
Nel corso di laurea in Scienze Tecnologie e Sicurezza delle Produzioni Animali (L-38), dal 2018 è docente per la disciplina “Metodologie Ispettive delle produzioni alimentari di origine animale”.
Dal 2015 fa inoltre parte del Collegio dei Docenti del Dottorato in Scuola di Dottorato di Ricerca in Scienze Veterinarie, in cui tiene 5 ore di attività didattica “Metodologie tecniche nel controllo ispettivo degli alimenti di origine animale” e 2 ore di attività seminariale dal titolo “Attualità nell’ispezione degli alimenti di origine animale”.
Per la Scuola di Specializzazione in “Ispezione degli Alimenti di Origine Animale” dell’Università degli Studi di Messina dal 2018 è docente della disciplina “Organizzazione e strategia nel controllo sanitario degli alimenti di origine animale” e di "Tecniche di laboratorio per la certificazione degli alimenti di origine animale".
Attività didattica internazionale:
Nel 2018 è stato Academic supervisor dell’Erasmus+ KA107 scholarship per il Dott. ABDELAZIZ ED-DRA tra Università degli Studi di Messina e University Moulay Ismail, Faculty of Sciences, Meknes e Co-director della tesi di Dottorato della Dr. Sonia Arab, Master Assistant in Veterinary Science at Blida University 1 (Algeria) dal titolo “Contribution à l'étude de la recherche des espèces de Vibrio potentiellement pathogènes chez les produits de la mer en Algérieat”.
Nel 2019 è stato Academic supervisor dell’Erasmus Program per il Dott. Mustapha AAZZA tra Università degli Studi di Messina -Italy e University Moulay Ismail, Faculty of Sciences, Meknes – Marocco, e nel 2020 Tutor della Dott.ssa Fliou Jamila (PhD student at the Moulay Ismail University of Meknes-Morocco) relativamente alla borsa di studio rilasciata dall’“Ambasciata Italiana in Rabat” e gestita dalla “Direzione Generale Promozione Sistema Paese – Ufficio VII- Ministero degli Affari Esteri e della Cooperazione Internazionale- Roma” relativamente all’attività di ricerca sulla “Biological activity of the extracts of the plant Daphne gnidium L.”.
Attività Scientifica:
L’attività scientifica è certificata da oltre 80 articoli pubblicati su riviste nazionali e internazionali (inclusi proceeding abstract di congressi nazionali ed internazionali).
I principali obiettivi di ricerca sono: i) qualità e sicurezza dei prodotti della pesca con particolare riferimento ai parassiti e ai batteri agenti di malattie alimentari e di spoilage); ii) Effetti degli oli essenziali su parassiti, microrganismi e qualità degli alimenti; iii) applicazione di tecniche innovative per la gestione dei piani del sistema HACCP nelle industrie alimentare; iv) applicazione di challenge test e di microbiologia predittiva per la “Quantitative Risk Assessment”; v) valutazione della presenza di microplastiche nei prodotti della pesca e in alimenti di origine animale.
Altri incarichi e attività:
Dal 2019 è Editor in Chief per la rivista scientifica internazionale “Integrative Journal of Veterinary Biosciences” (ISSN: 2577-4492).
Nel 2020 è stato selezionato dalla rivista scientifica internazionale “Sustainability” (ISSN 2071-1050), come Guest Editor, con il Dott. Luca Nalbone, per lo special issue “Safety and Quality of Sustainable Food”.
Fa parte dell’Editorial board di 15 riviste scientifiche interazionali, tra cui la prestigiosa “PLOS one”.
Dal 2016 è Socio fondatore della società Riconnexia srls, Spin off dell’Università di Messina.

Prof. Filippo Giarratana was born in Ciriè (TO) the 26th October 1978 and he graduated at Faculty of Veterinary Medicine of the University of Messina, on 04th November 2004, discussing the Thesis titled “Colour assessment of tuna muscle employed in canning industry”
In 2007 he obtained the title of PhD in "Health of the marine environment, fish pathology and sanitary quality of fish" (XX Cycle at the Faculty of Veterinary Medicine of the University of Messina), discussing a doctoral thesis entitled: "Interference of Specific Spoilage Organism (SSO) on the in vitro growth dynamics of Aeromonas hydrophila".
From 2008 to 2011 he attended the School of Specialization in “Inspection of Foods of Animal Origin”, at the Faculty of Veterinary Medicine of Turin, based in Moretta (CN), obtaining the title of "Specialist in Inspection of food of animal origin".
From 2009 to 2013 he had a "Research Fellow” entitled: "Characterization of the hazard in off-shore aquaculture products in view of the obligations set out in Regulation 852/2004 for primary production".
From 2014 to 2018 he was a "Junior" Researcher for the Disciplinary Scientific Sector VET/04- Inspection of Food of Animal Origin. In July 2017 he obtained the National Scientific Qualification for the functions of Professor II (Associate) Call for D.D. 1532/2016 for SC 07/H2 from 20/07/2017 to 20/07/2023.
From 11th December 2018 he is a “Senior” Researcher for the Disciplinary Scientific Sector VET/04- Inspection of Foods of Animal Origin at the Department of Veterinary Sciences, University of Messina.
In November 2020 he obtained the National Scientific Qualification for the functions of Full Professor - Call for D.D. 2175/2018 for SC 07/H2 - SSD VET/04 from 19/11/2020 to 19/11/2029.
From 11th December 2021 he is Associate Professor for the Disciplinary Scientific Sector VET/04- Inspection of Foods of Animal Origin at the Department of Veterinary Sciences, University of Messina.
National teaching activity:
In the Degree in Veterinary Medicine (LM42) since 2014 he has been and is teacher of the following disciplines, "Internship VET/04 - Official Audit", "Internship VET/04 - Official control of the food industry 1" and "Internship VET/04 - Official control of the food industry 2".
In the degree course in “Animal Production Technology and Safety Sciences” (L-38), since 2018 he is teacher for the discipline "Inspection methodologies of food production of animal origin".
Since 2015 he is member of the Doctoral School Committee of the Doctoral School of Research in Veterinary Sciences.In the School of Specialization in "Inspection of Foods of Animal Origin" of the University
of Messina since 2018 he is teacher of "Organization and strategy in the health control of food of animal origin" and of “Laboratory techniques for the certification of food of animal origin”.
International didactic activity:

In 2019 and 2020 he was “Academic supervisor” of the Erasmus Program for Dr. Mustapha AAZZA between University of Messina -Italy and University Moulay Ismail, Faculty of Sciences, Meknes - Morocco, and “Tutor” of Dr. Fliou Jamila (PhD student at the Moulay Ismail University of Meknes-Morocco) relating to the scholarship issued by the "Italian Embassy in Rabat" and managed by the "Directorate-General for the Promotion of the Country System - Office VII- Ministry of Foreign Affairs and International Cooperation- Rome" in relation to the research on the "Biological activity of the extracts of the plant Daphne gnidium L.".
Scientific activity
The scientific activity is certified by more than 80 papers published on national and internationals journals (including national or international congress proceedings).
The principal research objects regard: i) the seafood product quality and safety with particular regard to the presence of parasites, foodborne disease or spoilage agents and chemical pesticides; concerning this field, in the last decade, the safety of aquaculture product was particularly stressed; ii) the correlations between animal health and welfare and meat hygiene at the slaughter; iii) the application of innovative techniques in order to plan the HACCP system in food industries; iv) the application of microbial challenge tests and predictive microbiology to Quantitative Risk Assessment, with particular regard to seafood products; v) evaluation on the presence of microplastic in food of animal origin.
Other assignments and activities:
Since 2019 he is Editor in Chief for the international scientific journal “Integrative Journal of Veterinary Biosciences” (ISSN: 2577-4492).
In 2020 he has been selected by the international scientific journal “Sustainability” (ISSN 2071-1050), as Guest Editor, with Dott. Luca Nalbone, for the special issue “Safety and Quality of Sustainable Food”.
He is member of the editorial board of 15 international scientific journals, including the prestigious "PLOS one".
